Those games are cheap to make compared to your hypothetical all encompassing RPG where everything affects everything. Why do you think many people stick with making the games in RPGMaker?
I don't think anyone has the heart to tell echoes that no one is going to fund a triple A rpg with a fat ugly lesbian main character. I doubt echoes even honestly wants that. I'm sure those VNs are all about anime schoolgirl lesbians who look like this:
